As origens da Adega do Sul Churrascaria datam de 25 de Outubro de 1980 com a união empresarial de três irmãos filhos de uma tradicional família gaúcha. Com apuro e minúcia trouxeram a forma típica do verdadeiro churrasco gaúcho, regado obviamente, a vinhos finos.
Com a dissolução dessa sociedade 11 anos depois, assume no dia 25 de outubro de 1991, um dos irmãos. While decidedly elegant, Chef Gutenbrunner avoided the hype associated with many New York restaurants, intending instead to allow Wallsé to develop a personality which was heavily contributed to by his clients.
