Após oito anos atuando juntos no ramo de varejo alimentício, os dois perceberam uma grande necessidade por parte das pessoas que se alimentavam fora de casa: uma refeição saborosa, rápida e de alta qualidade, servida através de um ótimo atendimento que as deixassem à vontade. Nascia, assim, o inovador conceito do Spoleto onde o cliente é o chef e, como em casa, tem a liberdade de escolher ingredientes e criar suas próprias receitas. Uma inovação que possibilitou a união da qualidade de um restaurante com a rapidez de um fast-food. Desta maneira, o conceito Spoleto surgia como excelente opção de alimentação fast-casual.
Vale destacar que, ao longo dos anos, o Spoleto escreveu sua estória pautada na arte. A arte de cozinhar, a arte de atender, a arte de servir e a arte de encantar ao cliente. Como não poderia deixar de ser, o Spoleto seguiu a tradição artística da cidade italiana que dá nome à rede.

Carla Pernambuco, gaúcha de Porto Alegre, sempre se interessou pelos mais variados estilos de culinária. Foi atriz, jornalista, publicitária, estudou e trabalhou Nova York. De volta ao Brasil, ela e o marido, o fotógrafo carioca Nando Pernambuco, inauguraram o Carlota em 1995 em São Paulo. Em 2001 abriram filial no Rio de Janeiro, no bairro do Leblon. O restaurante, prima pela atmosfera caseira e cozinha “artesanal” com entradas do tipo bolinhos de carne de sol, aipim e tapioca, pasteizinhos de camarão, cogumelos shitakes, rolinho vietnamita de camarão e legumes e o delicioso tartar de salmão. Para pratos quentes filet mignon c/crosta crocante acompanhado de spaguetti de pupunha e o linguado grelhado. Nas massas gnocchi com cogumelos e rúcula. Para sobremesa gâteau de chocolate com creme.

Born in St Angelo dei Lombardi in the Italian
province of Avellino, Chef Sena came to
attending New Utrecht High School in
Brooklyn, Stefano studied culinary arts as an
apprentice at the Alps Restaurant here on Staten
Island under owner/chef Gerard Campitiello.
Upon graduation from high school Stefano
embarked on a 12-month regional Italian cuisine
apprenticeship in Genoa, Italy after which he
continued his education at the highly esteemed
Culinary Institute of America (CIA).

On July 14, 1980 the Marina Cafe opened its doors to Staten Island.
