Thalia is centrally located in the heart of New York City's Theatre District. O Tábua de Carne Restaurante deu início às suas atividades na cidade de João Pessoa, PB. Tudo começou devido ao fechamento do Paraiban (Banco do Estado da Paraíba) e diante do desemprego das três sócias, surgiu a idéia de abrir um restaurante, que se chamaria Tábua de Carne. Essa alternativa surgiu devido à tradição de Picuí-PB (cidade natal dos sócios) em comida regional, mais especificamente na famosa carne de sol.
No início das atividades os três casais trabalhavam na unidade de João Pessoa e com o apoio dos amigos, se tornou um grande sucesso. Em 1991 um dos casais abriu seu próprio restaurante na cidade de Campina Grande, e em julho de 1992, os outros dois casais se uniram e abriram a primeira filial do Tábua de Carne em Natal (RN) ao lado do Shopping Cidade Jardim.
